Apr 30th 2007 3:56PM We have a Ritters(sp) near our house and end up eating there way too much. They make frozen custard and it's creamy smooth texture is amazing. It's not from a big box store and they make them in small batches, rotating the flavors daily. It's some of the best "Ice cream" I've ever had.

Jan 15th 2007 11:59AM What works very well is a stock pot with a spout at the bottom, though those are expensive. The most important thing though is cooling your stock as quickly as possible so it doesn't stay in the "zone" for very long. But letting the fat harden is by far the easiest way to get rid of the fat, and to keep it if you care to. In a restaurant I worked in we used to keep the beef fat on occasion for use in other foods.

Hot chocolate: Do you make it with water or milk? {Slashfood}

Dec 19th 2006 9:13AM Milk all the way, although I believe there is a difference between hot cocoa and hot chocolate. Cocoa is powder dissolved in milk whereas hot chocolate is chocolate melted in milk. Great, now I'm gonna have to go hit wikipedia and figure this out.
